soup revisited *

Soup Season

White Chicken Chilli
2 C cubed chicken breast
3/4 C chopped onion
2 cloves of garlic
2 tsp cumin
1 tsp cayenne pepper
1 tsp oregano
Put above in pan with a little oil.

In a stock pot add:
3 can of Great Northern Beans
2 can of chicken broth OR 4 cups of boiling water w/ 4 tsp of chicken bullion

Simmer for 30 minutes
Then add:
1/2 C sour cream
2 C cheese
You can choose to start the chicken in a fry pan and then add it to the beans in the stock pot OR just do it all in the stock pot. :)

Italian Tortellini Soup
1 lb Italian sausage
5 cups beef broth (5 cups water & 5 tsp bullion)
1 cup chopped onion, fresh or frozen
1 cup sliced carrots, fresh or frozen
1 cup diced celery, fresh or frozen
½ cup chopped green pepper, fresh or frozen
½ tsp garlic salt
½ tsp basil
½ tsp oregano
8 oz fresh or frozen tortellini
16 oz can diced tomatoes
8 oz can tomato sauce
Brown meat, remove fat. Mix everything but tortellini. Bring to a boil. Reduce heat and simmer 30 minutes. Add tortellini & cook 30 minutes more or until tortellini is done. Makes 8 servings

Chicken Tortilla Soup
12 ounces of cooked, shredded chicken breast
1 can of Cream of Chicken Soup
1 can of Fiesta Nacho Cheese Soup
1 can of chopped green chilies (4 ounces)
1 can enchilada sauce
2 2/3 cup of milk

Add all together until hot. Serve with chips and sour cream.

Sausage Barley Soup
10-16 oz coined Kielbasaor smoked sausage
4 cups of water
1- 15.5 can of Great Northern Beans (white) rinsed and drained
1- 14.5 can of stewed tomatoes
1 medium onion
1/2 cup celery or green peppers
1/2 cup carrots
1/2 cup quick barley (there is regular AND quick...get quick)
2 tsp Worcestershire sauce
1/2 tsp basil
dash of hot pepper sauce

Cut sausage. Add all ingredients but hot sauce. Bring to a boil, simmer 15 minutes.

Taco Soup
2 # ground beef
1 large onion chopped
1 can pinto beans
1 can corn , drained
1 can Mexican stewed tomatoes
1 can Rotel tomatoes
1 pkg dry ranch
2 1/2 cups water.
